Both iron deficiency and iron excess decrease disaccharidase activities.(44,45) Many studies reported that iron deficiency decreased the activity of disaccharidases,(44,46) especially lactase,(47,48) which might result from the reduced ability to synthesize lactase in enterocytes.(49) The present study found that amino acid-Fe(II)-chelator complexes reduced maltase activity in intestine.
