Compared with the control group, the expression levels of Ras, Raf1, MEK‐1, ERK1/2, p‐ERK1/2, PLD1, mTOR, and p62 in the liver tissue of NAFLD group mice were significantly increased (p < 0.01), while the expression levels were significantly decreased after quinoa intervention. This evidence concerns the gene MAP2K1 and metabolic dysfunction-associated steatotic liver disease.
