In models of dyslipidemia induced by a high-fat diet, gingerol was found to enhance lipid profiles while also influencing the expression of several key enzymes involved in lipid metabolism, including lipoprotein lipase, lecithin–cholesterol acyltransferase (LCAT), HMG-CoA reductase, and acetyl-CoA carboxylase.
