We have also established a method for cultivating bean sprouts rich in the HASPIN inhibitor coumestrol [14], and showed that the oral administration of these bean sprouts to 5XFAD mice, a widely used animal model of Alzheimer’s disease, reduced the levels of phosphorylated tau and amyloid beta in the hippocampus and prevented short-term memory loss [4]. The gene discussed is HASPIN; the disease is Alzheimer disease.
