Protein hydrolysates derived from shrimp heads exhibit multiple beneficial effects, such as antioxidant and antibacterial activities (Nguyen et al. 2024; Zhou et al. 2023), as well as inhibitory activities against enzymes related to some non‐communicable disorders, including angiotensin‐converting enzyme (ACE) for hypertension (Zhou et al. 2023), α‐amylase for type‐2 diabetes (Nguyen et al. 2024), and pancreatic lipase for obesity (Kemsawasd et al. 2024).
