Evidence in the literature on the effects of mycoprotein on postprandial glucose and insulin response iAUC0-180 min is limited to only one study including healthy subjects with overweight and obesity [33], in which similar amounts of mycoprotein (132 g) to the ones tested in the present study, did not lead to a decrease in glucose iAUC0-180 min but decreased insulin iAUC0-180 min by 21% compared to protein and energy matched-chicken combined with 25–30 g of carbohydrate intake.
