As far as the literature shows, this is the first study to highlight the association between dietary acrylamide intake and the risk of MetS incidence; previous studies have evaluated the metabolic effects of biomarkers of internal exposure to acrylamide, measured as adducts of acrylamide and glycidamide hemoglobin (HbAA and HbGA) (Hung et al. 2021; Wan et al. 2022). This evidence concerns the gene HBG1 and metabolic syndrome.
