The CTB-ACE2 protein produced in edible lettuce and delivered in a chewing gum formulation was effective at debulking > 90% of the SARS-CoV-2 virus in COVID-19 patient saliva and swab ex vivo samples and has received FDA approval to be evaluated for its efficacy in decreasing the infection and transmission of SARS-CoV-2 in phase I/II clinical trials (NCT05433181) [12,19].
