Although orange carrot supplementation did not inhibit weight gain, the carotenoids present decreased IL-6 and calprotectin levels, as the HFD+OC group had the most pronounced decrease in fecal calprotectin levels and the lowest colonic IL-6 concentrations, indicating a protective and anti-inflammatory effect of orange carrot supplementation in high-fat diet-induced obesity.
