Specifically, higher intake of dietary nitrate was associated with better language scores in non-carriers of the APOE ε4 allele and with better episodic recall and recognition memory in those at higher risk of Alzheimer’s disease (AD; the most common form of dementia) due to the presence of one or two APOE ε4 alleles (11).
