The known mechanisms of anthocyanins include a) inhibition of carbohydrate metabolizing enzymes and intestinal glucose transport, b) inhibition of dipeptidyl peptidase IV (DPP-4), c) protection of β-cells, d) improvement of insulin resistance, e) improvement of blood glucose levels, f) improving lipid metabolism g) reducing oxidative stress and h) reducing inflammation [93, 96-98]. This evidence concerns the gene DPP4 and Insulin resistance.
