IGHE and Alzheimer disease: Since IgE binding only demonstrates sensitization at best and not the elicitation of clinical reactions, more work is needed to develop methods for clinical testing in humans or humanized cell lines/humanized animal models; only two in vivo studies of novel therapeutics (use of wheat naturally deficient in ω5 gliadin, such as Einkorn for WDEIA; and enzyme-treated wheat flour for gluten-induced AD) have been reported for human gluten hypersensitivity [69,70].
