Ultra-processed foods (UPA), defined as industrial formulations manufactured from substances derived from foods and additives with minimal amounts of whole foods, have a high glycemic load, which may increase the risk of metabolic syndrome in genetically predisposed children, accelerating the destruction of beta-cells, which are responsible for insulin production, and consequently, causing an early onset of T1DM [9,10,11]. This evidence concerns the gene INS and type 1 diabetes mellitus.
