INS and Insulin resistance: High-fat, carbohydrate-restricted diets improve atherogenic dyslipidemia and insulin resistance [25,27,30,31,32] because carbohydrate consumption increases hepatic TG synthesis and induces insulin secretion that leads to inhibition of lipolysis, enhanced delivery of fatty acids for hepatic esterification and overproduction and secretion of large TG-rich VLDL particles.
