Changes in these lipid metabolites have been reported in non-alcoholic fatty liver disease, obesity, type 2 diabetes, and several cardiovascular diseases for which chronic inflammation is a major contributor.71 Because oxylipins are generated by the oxidation of different PUFAs through COX, LOX, and CYP pathways, we analyzed oxylipin profiles stratified by oxylipin's precursors and synthesis pathways.
