Data from a case–control study and a randomized controlled trial showed that anthocyanins, a flavonoid subclass, abrogate NLRP3 inflammasome, caspase-1, IL-1β, and IL-18 expression in subjects’ peripheral blood mononuclear cells (PBMCs) and plasma levels of IL-1β and IL-18 in patients with NAFLD (72). This evidence concerns the gene IL1B and metabolic dysfunction-associated steatotic liver disease.
