After RRTJ was fermented by Lactobacillus paracasei SR10-1 (FRRT), the levels of GSH-PX, CAT, SOD, and T-AOC had significantly increased (p < 0.05), indicating the synergistic effect of Lactobacillus paracasei SR10-1, and RRTJ significantly improved oxidative stress in T2DM mice (Figure 6). This evidence concerns the gene SOD1 and type 2 diabetes mellitus.
