In a 14-day in vivo assay, type 2 diabetes-induced male and female rats were fed with rice analog (formulated with mocaf, corn, pigeon pea, and seaweed, 71:21:7:1, w/w/w/w) and showed better morphological characteristics in islets of Langerhans and an increase in insulin production, since rice analog presented a low glycemic index (47.36) compared with the control diet, based in commercial Broiler-1 product (66.35) (143). This evidence concerns the gene INS and type 2 diabetes mellitus.
