Interestingly, in a recent nutritionally-induced obesity murine model, it has been shown that phenol-rich water extract from purple maize pericarp (PPE), known to modulate inflammatory and obesity markers, significantly reduced body weight gain and markedly upregulated the expression of MMP3 in the adipose tissue of HFD-fed mice [60]. This evidence concerns the gene MMP3 and obesity due to melanocortin 4 receptor deficiency.
