β-sitosterol is the more abundant phytosterol in avocado oil (Berasategi, et al., 2012), and it may be responsible for a great part of the effects seen in this study, as it decreases blood glucose levels, improves insulin sensitivity and liver steatosis in diabetic rats consuming a high fat and sucrose diet (Babu and Jayaraman, 2020), diminishes oxidative stress by augmenting glutathione content (Vivancos and Moreno, 2005) and enhances ETC function (Wong et al., 2016).
