β-sitosterol is the more abundant phytosterol in avocado oil (Berasategi, et al., 2012), and it may be responsible for a great part of the effects seen in this study, as it decreases blood glucose levels, improves insulin sensitivity and liver steatosis in diabetic rats consuming a high fat and sucrose diet (Babu and Jayaraman, 2020), diminishes oxidative stress by augmenting glutathione content (Vivancos and Moreno, 2005) and enhances ETC function (Wong et al., 2016). The gene discussed is INS; the disease is fatty liver disease.
