Furthermore, in the context of obesity, among the proteins common to all EVs analyzed in the present work, we found similarities to those characterized in our previous studies [7,9]; thus, we identified structural and cytoskeletal proteins such as annexins A1/A6 that modulated anti-inflammatory processes and could be altered in obesity-associated type 2 diabetes [55] and histones such as H4 of which epigenetic changes such as lysine acetylation are known to trigger metabolic disorders in mice with diet-induced obesity (DIO) [56]. Here, ANXA1 is linked to obesity due to melanocortin 4 receptor deficiency.
