VCAM1 and atherosclerosis: Colman-Martinez et al. [81] showed that daily consumption of 200–400 mL of tomato juice for 4 weeks resulted in significantly lower concentrations of inflammatory molecules related to atherosclerosis, such as ICAM-1 and vascular cell adhesion molecule 1 (VCAM-1), and a tendency to decrease IL-8 in a population at high cardiovascular risk.
