Determination of fatty acid esters of hydroxy fatty acids (FAHFAs) in Snow mountain garlic is important due to their effect on human health, such as anti-diabetic and anti-inflammatory activities, reduction in adipose tissue and serum of insulin-resistant humans, reduction of inflammatory cytokine production, and in adipose inflammation in obesity [35,36]. Here, INS is linked to obesity due to melanocortin 4 receptor deficiency.
