Natural substances contained in fruit and vegetables, such as resveratrol, quercetin, sulforaphane, and curcumin, to name but a few, all have a stimulating effect on the intranuclear pathway of transduction of the Nrf2 signal and an inhibitory effect on the NF-κB pathway (Figure 1) [116], with the result of limiting the effect of the cytokine storm that occurs in patients with severe COVID-19 [117] and persistent inflammation and autoimmunity [118] that may occur in long COVID-19.
