A study on apolipoprotein E-deficient mouse (Apoe–/–) model of atherosclerosis showed that 8-week standard diet supplementation with ellagitannin-rich walnuts (Juglans regia L., Juglandaceae, 1.2 g homogenized walnuts per 5 g diet) led to a moderate reduction in prothrombin level and increase in the antioxidative capacity in plasma. Here, APOE is linked to atherosclerosis.
