The interaction of endogenous AGEs with RAGE can lead to the production of pro-inflammatory cytokines and has been linked to the development and progression of a number of diseases, such as type 2 diabetes, cardiovascular diseases, some forms of cancer, neurodegenerative diseases such as Alzheimer’s and Parkinson’s, liver diseases and osteoporosis [9,11,12,13], and more recently to the development of food allergies [14,15,16]. This evidence concerns the gene AGER and food allergy.
