L-asparaginase (L-asparagine amidohydrolase, EC 3.5.1.1) is an enzyme that hydrolyzes L-asparagine to aspartic acid and is utilized for the treatment of acute lymphoblastic leukemia [14] as well as for the reduction of carcinogenic compound acrylamide in food [15].
