LAP3 and Cowden disease: A study of the hydrolysis of α-gliadin fragments by peptidases from sourdough of Lactobacillus plantarum and Pediococcus pentosaceus strains, among which proline-specific peptidases are prominent, showed that L. plantarum strains hydrolyzed more than 60% of α-gliadin peptides involved in the immune response in CD patients, corresponding to fragments 31–43 (LGQQQPFPPQQPY) and 62–75 (PQPQLPYPQPQSFP).
