Four genes which were modulated in the processed red meat group, that is, gremlin 2, DAN family BMP antagonist (GREM2), carbonic anhydrase VII (CA7), aldo‐keto reductase family 1, member B10 (aldose reductase) (AKR1B10), and RAS protein activator like 1 (GAP1 like) (RASAL1) are reported to play a role in the colon and/or CRC and will be further described in the discussion. This evidence concerns the gene AKR1B1 and colorectal carcinoma.
