Studies of the ethanol/acidic water extract (pH 3.2) 7:3 v/v from cold-pressed fresh grape seed oils, performed by Cecchi et al. [12], demonstrated in vitro inhibitory activity against PTP-1B (protein-tyrosine phosphatase 1B enzyme), an enzyme that is over-expressed in type 2 diabetes, with maximum inhibition values (98%) for Vitis vinifera cv. Here, PTPN1 is linked to type 2 diabetes mellitus.
