Simple phenolic acids derivatives of hydroxybenzoic and gallic acids have been previously proved to exert anti-inflammatory activities; gallic acid exerted inhibitory effects on LPS-stimulated PGE2 and IL-6 production and COX-2 expression in RAW 264.7 cells [27], and inhibited several NLRP3 inflammasome markers in an in vitro model of intestinal inflammation [28].
