Therefore, here, cell culture and seed originating from date palm fruits at the Khalal stage of Barhi cultivar were investigated regarding their nutritional values, bioactive compounds (phenolic acids, flavonoids, and carotenoids) and in vitro health properties by targeting inhibitions of the key enzymes that control some non-communicable diseases including obesity (lipase), diabetes (α-amylase, α-glucosidase, and dipeptidyl peptidase-IV), Alzheimer’s disease (acetylcholinesterase, butyrylcholinesterase, and β-secretase), and hypertension (angiotensin-converting enzyme).
