Importantly, consumption of a Mediterranean diet is associated with a reduction in the inflammation, coagulation, and endothelial dysfunction markers including c-reactive protein (CRP), interleukin 6 (IL-6), fibrinogen, homocysteine, and E-selectin (61–63) which is consistent with findings of a reduction in inflammation markers across plant-based diet consumption (64).
