TNF and endothelial dysfunction: The authors showed that the consumption of EVOO is able to improve the anti-inflammatory action of the MD through the reduction of myeloperoxidase (marker of inflammation and endothelial dysfunction), 8-hydroxy-2-deoxy-guanosine (oxidative DNA damage marker), tumor necrosis factor (TNF)-α and interleukin (IL)-6 (cytokines involved in the inflammatory response).
