Gluten ingestion is responsible for the development of Celiac Disease (CD), an autoimmune enteropathy activated in the lamina propria of the gut of genetically predisposed individuals [6] by gliadin peptides and resulting in the recruitment of infiltrating T lymphocytes producing Interferon-gamma (IFN-γ) and Interleukin-15 (IL-15).
