Interestingly, stearoyl-CoA desaturases expression and activity and the subsequent conversion of saturated LCFA to monounsaturated LCFA, were linked to CRC pathogenesis (Vargas et al., 2015; Igal, 2016), and consequently an accumulation of monounsaturated LCFAs.
