In the current study, we showed that chronic intake of maple syrup, molasses, agave, and corn syrups was associated with a blunted hepatic inflammation compared to sucrose intake as revealed by a significant and specific reduction of IL-1βprotein level, an important mediator of NAFLD in animal models [47,48] Indeed, mice deficient in IL-1β signaling, or in inflammasome components converting the pro-form of IL-1β to its active form, are resistant to the development of high fat diet-induced hepatic steatosis. The gene discussed is IL1B; the disease is fatty liver disease.
