INS and atherosclerosis: Several additives found in processed meats such as nitrites and their by‐products (e.g., peroxynitrite) experimentally promote atherosclerosis and vascular dysfunction (Förstermann, 2008), reduce insulin secretion (Förstermann, 2008), and impair glucose tolerance (Portha, Giroix, Cros, & Picon, 1980).
