It has been demonstrated that in healthy adults eight-week supplementation with 56.7 g almonds significantly reduced fasting glucose, although, similarly to the study of Cohen and Johnston [62], insulin and glucagon-like peptide 1 (GLP-1) levels were not impacted; however, researchers observed increased sensitivity to insulin, evaluated by both the insulin resistance index and the Matsuda index as 34% lower and 82% higher, respectively, than the control [63]. This evidence concerns the gene GCG and Insulin resistance.
