GSTM1 and anemia (phenotype): According to Egbi et al. [39] in a supplementation study with children ages 6–9 years, it was found that the consumption of green leafy vegetables, among them, plants of the genera Amaranthus spp., increases Hb concentrations in supplemented children (12.1 g/dL) compared to the control group (11.3 g/dL) at the end of the study, minimizing the prevalence of anemia (supplemented: 33.3%; control: 57.5%) in participants treated with the powder preparation.
