A study on apolipoprotein E-deficient (apo E−/−) mice model of atherosclerosis exhibited that the dietary supplementation with bilberry anthocyanin-rich extract (Antho 50 from FERLUX S.A, Cournon d’Auvergne, France) containing 52% of pure anthocyanins for 2 weeks reduced plasmatic total cholesterol (−20%) and hepatic triglyceride levels (−30% in the liver), whereas the plasma antioxidant capacity remained unchanged [64]. Here, APOE is linked to atherosclerosis.
