Wheat gluten is a complex of albumin, globulin, gliadin and glutenin.[14] Gliadin is a well-known pathogenic factor for celiac disease.[15] Other than celiac disease, recent studies suggested that gliadin may have a role in a variety of diseases,[16, 17] such as type 1 diabetes,[18] rheumatoid arthritis[19], primary Sjögren's syndrome[19], and multiple sclerosis[20].
