Wheat hypersensitivities can be classified into celiac disease (CD) and related disorders (dermatitis herpetiformis Duhring and gluten ataxia), non-celiac gluten/wheat sensitivity (NCGS), non-IgE-mediated allergies and IgE-mediated allergies such as food allergy, skin allergy, respiratory allergy (e.g., baker’s asthma), and wheat-dependent exercise-induced anaphylaxis (WDEIA) [1,2].
