Whilst there is no clinical evidence to suggest its inclusion in such diets would be problematic for animals sensitized to corn, in a recent study evaluating the proteins present in three commercial hydrolysate-containing pet foods, granule-bound starch synthase 1 (GBSS-I, an NDP-glucose-starch glucosyltransferase) was the only corn protein identified as an allergen by serum IgE from a small fraction of dogs with suspected nonseasonal allergy [9]; of importance is that GBSS-I is present in cornstarch.
