Overall, our results indicated that quail egg was able to significantly down-regulated PAR-2 receptor activation, inhibited the phosphorylation NF-kB downstream signalling pathway, inhibited the development of inflammatory responses, as well as EoE related inflammatory cytokines (IL-6, IL-8, TNF-α), adhesion molecules (ICAM-1, VCAM-1), and chemokines (eotaxin-1, RANTES), eosinophils related mediators (ECP, LTC-4, TGF-β).
