Ng et al. showed that fresh freeze-dried olive (containing around 3% hydroxytyrosol), delivered topically via an arginine bilayer film, could reduce arthritic scores, histological scores, paw and ankle circumferences and circulating interleukin-6 in a rat model of rheumatoid arthritis, induced by Freund’s adjuvant [124].
