Atherosclerosis is considered an inflammatory process and expression of pro-inflammatory molecules such as intercellular adhesion molecule 1 (iCAM–1) and C-C motif chemokine receptor 2 protein and mRNA expression of interleukin 6, interleukin 17 and inducible nitric oxide synthase in the aorta appear to be augmented from the second week of western-type diet, in the absence of changes in plasma pro-inflammatory cytokines interleukin 6 and 10 and tumour necrosis factor α (TNFα) [48, 50, 98]. This evidence concerns the gene IL6 and atherosclerosis.
