PON1 and diabetes mellitus: Chronic hyperglycemia in DM accounts for the establishment of oxidative stress in many tissues (liver, kidney, retina, and peripheral nerves) due to an overproduction of ROS; so the anti-hyperglycemic effect of curcumin-enriched yoghurt explains, at least in part, the reduction in the levels of the oxidative stress biomarkers (ox-LDL, Figure 2C; TBARS and PCO, Figure 3A,B) and the increase in PON1 (Figure 2D), SOD, CAT, and GSH-Px antioxidant enzymes (Figure 4A–C) and NPSH levels (Figure 4D) in STZ-diabetic rats.
