Our main objectives were: (a) to quantify and characterize the presence of these compounds in soy seeds before and after soaking and cooking; (b) to evaluate their effect on MMP-9 activity; (c) to test the effect of these compounds in colon cancer cell migration and proliferation; and (d) to compare protein and non-protein compounds for their potential in preventive diets.
