TNF and Insulin resistance: The dietary intake of AGEs lead to elevated AGEs’ serum levels which has been shown to correlate with inflammatory markers such as high sensitivity C-reactive protein (CRP), fibrinogen, 8-isoprostanes (a marker of lipid peroxidation), tumor necrosis factor-alpha (TNF-α), vascular adhesion molecule-1 (VAM-1) and Homeostasis Model Assessment index (HOMA) an indicator of insulin resistance [46,47] (Figure 2).
